How is the list of fields in the picker on the left (in the log view) refreshed? I have some data for which I have changed the log format, and many of these fields are no longer used. How can I remove the obsolete ones?

No way to delete as of today. Can you create an issue for it, so we can track it to completion.

Yup that captures it. I would add that the list could be depopulated after a set time or, alternatively, if the current search window does not contain any events with that field.

A simple manual option to delete should help as a first step
